The least known of the French Origin-Protected Cheese is probably the one with the most flavor. We love this cheese with almost anything, pimento peppers from South Africa, Tiptree strawberry preserves from England, or even alongside a fabulous dinner as an appetizer. It is handmade from raw sheep's milk in the Pyrenees Mountains that naturally separate France from Spain and aged for more than 8 months to give it a nice aged flavor that lingers long on the palate. Unlike some other aged sheep's milk cheeses, this one almost melts in your mouth. This is an original farmhouse cheese made by a single producer. We personally hand selected the cheeses we wanted to give you a cheese with the best possible flavor. Only three or four 11-lb wheels are made every day, so it is, by all means, an extremely limited production cheese. Definitely on our list of top 5 all-time favorite cheeses.
