Basil-Grilled Loin Chops

Ingredients:8 Lamb loin chops 1 tablespoon Dijon or Pommery mustard 1 tablespoon Balsamic or red wine vinegar 2 minced Garlic cloves 1/4 teaspoon freshly-ground black Pepper 1/4 cup extra virgin olive oil 4 teaspoon fresh slivered basil leaves
Directions:- Arrange the lamb chops in a single layer in a shallow glass baking dish.
- In a small bowl, whisk the mustard, vinegar, garlic and pepper. Pour the olive oil in slowly, then stir in the basil.
- Pour the mixture over the chops, coating both sides well.
- Cover, and refrigerate for 1-3 hours. Bring to room temperature 30 minutes before grilling.
- Place the chops on an oiled grill. Grill for 5-7 minutes, or until medium-well (or however you like)
