Basil-Grilled Loin Chops

Ingredients:

8 Lamb loin chops
1 tablespoon Dijon or Pommery mustard
1 tablespoon Balsamic or red wine vinegar
2 minced Garlic cloves
1/4 teaspoon freshly-ground black Pepper
1/4 cup extra virgin olive oil
4 teaspoon fresh slivered basil leaves

Directions:

  1. Arrange the lamb chops in a single layer in a shallow glass baking dish.
  2. In a small bowl, whisk the mustard, vinegar, garlic and pepper.  Pour the olive oil in slowly, then stir in the basil. 
  3. Pour the mixture over the chops, coating both sides well. 
  4. Cover, and refrigerate for 1-3 hours.  Bring to room temperature 30 minutes before grilling.
  5. Place the chops on an oiled grill.  Grill for 5-7 minutes, or until medium-well (or however you like)
Serves 4
