This is a raw AOC cow's milk cheese of Auvergne. The paste is moist and semi-soft. The veining is bold and deep blue and thoroughly spread through the entire cheese. The flavor is big, pungent, and less salty than other blues.
We handcut and wrap this cheese fresh from the whole wheel. Your piece may be slightly smaller or slightly larger than the actual weight listed. We will charge you the actual weight of the piece we cut for you.
