Cabrales Blue is one of the rarest blue cheese available these days. It is the only cheese that becomes blue naturally and without addition of the Penicillium usually added to all other blues. For this reason, some cheeses become blue while others don't. This makes production less than normal, making this cheese even more rare.   A very pungent and strong mountain cheese, Cabrales Blue is a hit every time we could get it in. Don't confuse this with Valdeon Blue, the Blue cheese from Spain that is wrapped in grape leaves and  often sold as Cabrales in the United States - this Cabrales is the authentic DOP cheese.
