Most Laudemio Olive Oil sold in this country is from the Frescobaldi mill - an oil that has gained reputation among many connoisseurs. However, what most people don't realize is that Laudemio is the name of a council of olive oil producers who, in the 1990's decided that the Italian-government-imposed restrictions for DOP olive oil from Tuscany was too weak, forming their own council. The oil we now carry is the one from the Castello Sonnino mill, the smallest of the Laudemio producers, and the most careful one that supervises every step of the olive oil producing process. The constant love, passion and commitment to achieving the highest level of olive oil quality is clearly evident in the aroma, taste, and even packaging and display of the bottle. Laudemio is a Latin phrase for 'tribute to the Lord' and this refers to the best part of the olive harvest.
This year, the oil is a super vibrant green, with a very strong spicy and peppery zest. It's tart but sweet and spicy aftertaste will bring to life everyday meals like grilled chicken, and will even complement even more exotic ones: try basting wild Alaskan salmon or tuna steaks before pulling them from the grill.
