The Grossane Olive is one that produces very little olive oil when pressed. It is always hard to get this one to the United States as the owners of Chateau d'Estoublon do not make a lot of it. We have to beg to get this one in every season. Harvested around Christmas time when it is black or near black, its oil has a fine, delicate flavor with a citrus aroma and slight fruitiness that slowly spreads all around your mouth. It goes beautifully with a salad of marinated scallops and is excellent in fruit salads, in particular strawberries with a squeeze of lemon.
