Chive-Cheese Butter

Ingredients:

1/4 lb soft butter, preferably with a high butterfat content, or margarine
2 teaspoons chopped chives
1/4 lb Roquefort or soft blue cheese
semi-coarse sea salt (Maldon or Fleur de Sel)

Directions:

  1. Blend the butter, cheese, and chives thoroughly.  If you used an unsalted butter, add a little sea salt to taste.
  2. Shape into a roll on waxed paper, and refrigerate until ready to use. 
  3. Serve sliced on broiled beef, fish, steaks, hamburgers, chicken halves, and more!
