We first heard about Don Enrique Rosemary a few years ago at a gourmet food show, and were anxious to taste this relatively new cheese. We could not resist the temptation and ate the whole serving - rind and all - in one sitting. A mild sheep's milk Manchego with dried Rosemary spread liberally on the rind - will easily become one of your favorites.
