Green Beans Vinaigrette

Ingredients:

1 lb trimmed fresh green beans
1/2 tablespoon lemon juice
2 teaspoons Moutarde de Meaux Pommery mustard
3 tablespoons extra virgin olive oil
salt and pepper to taste

Directions:

  1. Drop the beans in a saucepan of rapidly boiling water.  Simmer for 5 minutes, or until cooked, but still a little hard.
  2. Drain the beans and rinse with cold water.  Pile the beans into a colander and set aside.
  3. In a small bowl, whisk the lemon juice, salt, pepper, and Pommery mustard.  Add the olive oil a little at a time until the mixture is smooth. 
  4. Arrange the beans in a small dish, and pour the dressing over them. 
  5. Serve immediately.  
This recipe goes well with rack of lamb or filet mignon steak.
