Iliada Kalamata olives are grown in the Kalamata region of the southern Peloponnese in the south of Greece. They are hand-picked and cured in wine vinegar, then packed in salt, water, and olive oil. Kalamata olives are low in oleuropein the component which produces the bitter flavor in olives making them sweeter than other olives. They are great in salads or as a garnish. These Extra Large Kalamata Olives are the best pitted Kalamatas we could find. They are still plump and juicy, unlike most pitted Kalamatas that are very soft and lack their true flavor.
