Mahon is a cheese made in the Mediterranean island of Menorca in the Balearics from cow's milk and aged for about 6 months. It is shaped like a pillow because the people who make it use a square cloth to control the milk and age the cheese. This cloth is wrapped around the cheese while it is aging, and in the end, the natural rind forms into a square shape. Producers sometimes also wrap it in an orange wax after aging to protect it during shipping. People who taste this cheese fall in love with its bold, sharp flavor and dry texture, and so will you.
