Mango & Ginger Brandy Snap Baskets

Ingredients:150g (6 oz) White Stilton with Mango & Ginger 275g Greek Yogurt 100g diced fresh or tinned mango 30g finely diced stem ginger 4 Brandy snap baskets Raspberries and mint leaves to garnish
Directions:- Mix together the creamy White Stilton with mango & ginger and the Greek yogurt. Add the chopped mango and ginger, and mix through evenly.
- Spoon the mixture into the brandy snap basket and top with raspberries and mint garnish
- Serve immediately.
