Mascarpone is a triple-cream cheese made from creme fraiche, and tartaric acid. It is more like thick cream than cheese. Mascarpone's flavor is sweet and tart. The Colombo brand has a more traditional flavor and texture than most other brands on the market. It is widely used to make tiramisu, the famous Italian cake made with savoiardi (lady fingers) and mascarpone cheese.
