This is new for us this year - Podere di Pillore Organic Extra Virgin Olive Oil from Tuscany. Alberto Passigli, the owner of the mill, describes this year's harvest as scarce, but he still managed to produce an oil with a very bold green flavor that hints of artichokes. It's great on pasta, salads and bruschetta, but we also like it on fish and lamb. This is a completely organic olive oil that is the result of a long standing tradition in Alberto's estate. He uses antique terracotta jars to store the fresh-pressed olive oil so it can settle before bottling. He produces less than 2000 bottles per year, making his oil one of the rarest, and most hard-to-find in the world. An exceptional oil with a deep emerald green color - hard to find these days.
