Alberto Passigli, the owner of the mill, describes this year's harvest as scarce, but he still managed to produce an oil with a very bold green flavor that hints of artichokes. It's great on pasta, salads and bruschetta, but we also like it on fish and lamb. This is a completely organic olive oil that is the result of a long standing tradition in Alberto's estate. He uses antique terracotta jars to store the fresh-pressed olive oil so it can settle before bottling. He produces less than 2000 bottles per year, making his oil one of the rarest, and most hard-to-find in the world. An exceptional oil with a deep emerald green color - hard to find these days. 500 mL (16.9 oz)
