This is a pure sheep milk cheese from the Basque region in the Pyrenees mountains. It has a semi-firm, dense and smooth texture with a full meaty taste and nutty finish. It is similar to the Agour Ossau-Iraty, but a bit milder. It is great for cheese carts, buffet and plates.
