This is a true artisan, farmstead, cave aged version of Double Gloucester, a very popular British cheddar-like cheese. The bright orange paste is cloth wrapped. Each wheel is rustic, and coated with grey, blue and black molds. There are so many nuances in its flavor, ranging from earthy to full & sharp, with a slight blue-mold tang. An amazing cheese that is very hard to get in the United States, and even in Britain.
