One of the oldest cheeses in the world, Roquefort is said to date back to the time of Pliny in ancient Rome. In 1411, Charles VI granted the people of Roquefort the monopoly of ripening the cheese in their caves as they had done for hundreds of years. This Roquefort is different than any other because the penicillium used is a natural one, and not a laboratory product like the ones used by so many others. Although Roquefort is required to be aged for at least 3 months, this one is aged for at least 4 months, giving it an incredibly smooth and creamy flavor. This cheese can be used for any purposes; as a table cheese, a salad dressing, or even just to eat it in sandwiches as it is really that good! Papillon produces what many gourmets and connoisseurs consider to be the finest Roquefort anywhere.
