This traditional Danish blue cheese made from pasteurized cow's milk is characterized by a sharp, piquant and salty taste. After World War 2, global demand for French Roquefort far outstripped its limited supply, so Denmark made a blue to fill the void. It is very popular on salads and as a table cheese, and will go well on your next cheese tray.
