Stilton, England's king of the blues, usually spends 4 to 6 weeks in the aging rooms before being sold, but this one is extra aged and spends at least 15 weeks before being considered for sale at Thomas Hoe Stevenson's aging cellars. It has a marvelously caramelized color and a delicately smooth flavor. A rarity in the common world, even in Britain; good for novices and connoisseurs alike.
