Vache de Chalais is a soft-ripened cheese produced in Dauphin in the Alpes-de-Haute-Provence department in southeastern France. It is made with pasteurized cow's milk and has a fresh flavor with a citrus tang. Once you open the leaf wrap for each small disk, you will see a white and creamy interior. This cheese is very popular in cheese trays and for gift baskets.
