A flat-top pyramid of aged goat cheese coated in ash. When young it is moist, but when aged, it can be much drier. The exterior can be spotted with multiple molds, all of which are edible. The flavor is sharp, with a long finish. It is said that in the past, this cheese had a pointed top, but when Napoleon came back from his disastrous campaign in Egypt, he stopped at the Valencay castle. The sight of the cheese brought bad memories, so he chopped the pyramids off, leading to the shape it is still made in today.
