Australian Yellingbo Gold Single Estate Extra Virgin Olive Oil is a blend of Manzanillo, Leccino, Picual, and Corregiola olives typical of Tuscan varieties. It is cold pressed within 12 hours of being hand picked and bottled without filtering. Most great olive oils remain unfiltered, as certain flavor complexity is lost while filtering.
When we first heard about olive oil from Australia, we were skeptical at first, but when we first got one to try, we were delighted! Wow! It has a very fresh, intoxicating aroma of sweet apples and sun-ripened tomatoes, which leads to a rich and creamy palate, redolent of nuts and caramel. With a subtle, lingering peppery finish, this is a wonderfully fragrant and complex unfiltered olive oil. The Unfiltered Single Estate Version is produced in extremely limited quantities every year - only 4000 bottles are produced! We prefer it over their standard olive oil because it has a much richer flavor and smoother finish.
